If you've been here before then hello friend, good to see you again!

In a comment on one of the posts last week I was asked about our blog name. I realized then that Bree and I have never explained how we know each other or how our little blog came to be!

I figured now would be a great day to tell everybody since we'll hopefully make lots of new friends today :)

Well, I started to type out the whole long story but then realized, y'all are here for a giveaway! So I'm going to just get to the key points. 

We met in an online community for women who were pregnant and expecting in September of 2008. We've maintained a friendship through our pregnancies and over the past 2 and a half years of our toddler's lives. Coincidentally, we gave birth on the same day so our toddlers share a birthday!

We chat online daily and via email. We discovered that we both shared a love of sewing and quilting and general craftiness and she asked me one day if I would like to do a blog with her, and of course I said yes! 

When trying to come up with a name, we asked a lot of our other "friends-in-a-box" for suggestions but Bree ultimately came up with Distant Pickles. Her reasoning? We met when we were pregnant and pregnant women like pickles, and because we are distant from each other, physically of course. She lives two states away.

So Distant Pickles was born!

One day we hope to be Not so Distant Pickles. That's right, we've never actually met. Don't worry, when we do you guys will be one of the first to know!

I'm also throwing in a handmade goodie to be named at a later date because, well, I lost my sew-jo these past couple of weeks and I'm a little bit behind on finishing it up.

I have to tell you that my best friend is a distant pickle too (though without the pickle part :) ) She lives 8 hours away and we met online, but we do get to see each other once or twice a year. And to think - without the internet we wouldn't have met. Such an amazing concept really.

(and all of these dinner ideas are making me hungry ;) )

I used to work with my husbands cousin, Tiffany. When she was at the hospital with her 2nd baby I went to see her and my now husband's parents were there as well. There had been talk before about setting us up but now his parents had met me. After that visit they told him he'd better call me up. It took him 3 weeks to call but he did and that was in 2002.

My favorite easy thing for dinner so far is Tilapia :) my hubby doesn't even like tomatoes or fish and he ate this up! :D

put tilapia in a casserole dish - sprinkle some lemon juice on it, a good slice of mozzerella cheese, some oregano and a thick slice of tomato

bake for 10 min and it is amazing!! :D ...if you like tilapia :P

I've never done a give away before - this is fun. I loved your springtime quilt - the colors, the fabrics...it inspired me for a wedding quilt I want to do. Thank you!
Here's a recipe - or an idea for one - I had the BEST salad the other day: gorgonzola chicken salad with walnuts, and apples on a bed of greens and the dressing must have had the cheese in it as well as some slivers of cheese in the salad. I can't wait to order it again!!!

I had moved away from home for 6 years. I was home visiting and was at church and it was Christmas time. I met a young man, we were talking, I knew his parents but not him. I invited him to our home for a Christmas visit, after all, I was just visiting. I left after Christmas and we kept in touch. Many months later, my brother was in a serious car accident. I travelled home and decided to stay at home and attend university 3 hours away. The young man and I dated but I was adamant about attending university. He asked me to marry him but I declined and felt it was better if we stopped dating. He was persistent. He kept visiting and kept proposing. At the tenth proposal, I accepted. I never did get to university but I did get the most wonderful husband any wife could ever ask for. I love the fabric. Thank you for the opportunity.

My favorite dinner recipe:
Take a roast out of the freezer.
Put it in the crockpot.
Throw some spices on it (whatever floats your boat)
Turn crockpot on for 3-5 hours.
Eat.

Ok, well here is one of the first recipes I learned some 30 odd years ago....and it is always a hit, and almost too easy.

All you need is

1 polish sausage
-- you know those 1 pound numbers in a ring? Whatever variety you like, it doesn't really matter.

2 or 3 potatoes, cut up

1 can string beans

in a 2 quart pan, put the potatoes first, then the sausage, cut into either chunks or slices, and the string beans, juice and all on top.

Put a lid on and bring it to a boil, and cook until the potatoes are done, about 10 min.

You can adjust with more sausage, potatoes, use different beans, whatever. It's always a hit. That amount used to feed 2 adults and 1 child. I doubled when child 2 was old enough to eat it, about 10 years later...grin.

Yes my children are nearly a decade apart. He was planned, she was a wonderful blessings I wasn't supposed to be able to have. He is now 21, and she is 12. He has always been, and still is a bit of a challenge...to put it mildly. I love him dearly, and it started long before she was even the 1st hint of morning sickness....he's just got to figure EVERYTHING out himself, after doing his best to prove everyone else wrong. His dad is still kinda doing things that way. My daughter is a challenge, but it a much different way. There is no comparing them. He thinks he knows everything about her, because she must be just like him. We have given up explaining or arguing about anything with him. Hopefully he'll grow out of it sooner than his father....

Sautee some chicken in olive oil. Add some italian stewed tomatoes, olives, zucchini and simmer for a while. Serve with couscous! Yummy!

I have a great recipe. Healthy and quick. It makes a great side dish for any entree really.

Ingredients: Whole wheat cous cous, dried cranberries, fresh squeezed lemon juice, salt and pepper, green onion, cilantro

Cook the cous cous using directions on box (takes about 5 minutes). Fold in the chopped green onion, cilantro, and cranberries. Add lemon juice and salt and pepper to taste.

That's it! It is great warm or chilled as a salad. It's my favorite simple side.

The fabric is great worked with sunkist before and loved it. I like the way you both came up with the name.
I make packets of heavy duty foil in it I put smoked sausage ,cabbage,onion,potatoes cut up, bell peppers, any thing you want to add pour a little oil over it fold it up tight and place on grill turn a few times so it does not burn. Or in your oven.

How I met my husband. I had been divorced a couple of years, but just hadn't gotten really involved with anyone during that hiatus. A co-worker wanted me to meet a friend of hers named Frank. I kept hearing about Frank for months and months. Finally I told her I'd go meet this Frank guy at a nightclub. I finally got up my nerve and went. Well...Frank had been wanting to date someone else (who happened to break up with her boyfriend that night), so he skipped out on me and I was left alone at the table with my co-worker. In walks a guy who walks up and speaks to the folks at our table and sits down. His name was Harold, and we ended up talking to each other and had our first date the next night. For about 5-6 weeks, I kept calling him "Frank" because I had heard about Frank for so dang long!!! I could not remember his name as Harold. He was "Frank" to me!!!

Hi there, this is my first time here :) I'd like to share the funniest joke I just heard today from my husband.

Once upon a time, there were 3 pilots crashed their airplanes in a secluded Kalimantan jungle inhabited by a village of cannibals.

They plead for their lives and the chief said, "Fine, we won't eat you if each of you bring back one type of fruits you can find in this jungle"

So off they go searching for whatever fruits they can find and escorted back to the chief with a handful of fruits.

The chief said, " I will spare your life if you can stuck all the fruit up you your a$$ without letting out a single sound or cry "

The first pilot brought back 5 apples, by the second apple, he moaned a little bit, and off with his head.

The second pilot brought back just a handful of grapes. But up in heaven the first pilot met with the second pilot.

so the first one asked, "You idiot, grapes are easy, why in the world were you killed?"
The second pilot said, "I can't help laughing, the third pilot brought back 10 durians!!"

My recipe for chocolate toast:

butter your favorite toasting bread slices and sprinkle a generous portion of cocoa sweetened to taste with sugar over the butter. Toast in the oven until the chocolate is bubbly and the edges of the bread are gently brown. Yummy!

Thank you for the chance to win. Sunkissed would add a little spring to my wintery days (I'm in Australia so I am wearing Ugg Boots and a wool jumper and sitting in front of the heater). My dinner suggestion is Chicken Snitzle cut into strips and put on a flat bread wrap with Avacado, SOur Cream and sweet chilli sauce (add tomato, capsiucum or other veg to make it even healthier.

Thanks for this giveaway! Here's a recipe for you--not so much for dinner, but for a potluck or summer bbq.
Buffalo Chicken Dip
2 or 3 chicken breasts, baked and shredded (or 2 cans of chicken if you're feeling lazy)
3/4 cup hot sauce
1 8oz pkg cream cheese
1 cup ranch dressing (you can also use blue cheese!)
1 8oz pkg shredded cheddar cheese

Warm chicken in skillet (or cook on med for 5-6 min if using canned chicken) and add hot sauce. Cut the cream cheese in three or four sections and drop it in. After that's melted, add the ranch dressing and half the shredded cheese. Let it get all melty and incorporated together, then transfer to a small crockpot and put the rest of the cheese on top to get hot and bubbly. Serve with tortilla scoops, celery, chicken in a biscuit crackers...pretty much anything. It's a hit every time!

Hmmm dinner ideas ... fishcakes are always good! Boil and mash potatoes, mix in some chuncks of tuna or salmon, make into patties, brush with egg and roll in breadcrumbs. Serve with salad. Quick and yummy.

Try this - even kids like it (well, SOME kids, LOL): Toss together baby spinach, sliced strawberries, some feta cheese, chopped walnuts or pecans, and some Kraft raspberry vinaigrette salad dressing - YUMMY! I made this last night for a get-together and there was only a lone piece of spinach left in the bowl after dinner, lol. You can also make it with baby spinach + drained mandarin orange sections + diced red onion + sliced almonds + Kraft mandarin orange + sesame dressing (you can throw in some diced cooked chicken too, if you have some around) - equally good!

Here's a great recipe. It's not super healthy, but it's fun to make your own variations and these are fun to eat. They are called BBQ Beef Cups, and the original recipe is from one of the Four Ingredients cookbooks.

Ingredients: 1 lb. ground beef, 1/2 cup barbeque sauce, 1 can refrigerator biscuits, 3/4 cup grated cheddar cheese

Brown meat, drain. Add barbeque sauce and set aside. Place biscuits in ungreased muffin tin, pressing dough up sides of cups. Spoon meat mixture into cups. Sprinkle with cheese. Bake at 400 degrees for 12 minutes.

We have made TONS of variations. Use spaghetti sauce instead of BBQ and mozzarella instead of cheddar. Or add fajita or taco seasoning to beef instead of sauce and top with taco blend cheese. Or make scrambled eggs instead of beef and top cups with sausage gravy. So many options!

Oh gosh, I love charm packs! Our newest dinner meal has been fish tacos. We purchase fresh fish from the grocery, grill the fish in a pan with olive oil and seasoning. Add warmed corn tortillas and fresh veggies (cabbage, tomatoes, avocado) and grated cheese. Yum. We may have those tonight:)

Yay for a fun giveaway!!

I LOVE Paula Deen's baked tilapia

You take tilapia fillets, salt and pepper them and then sprinkle on the zest of limes (I usually use one small lime per fillet). Then you juice the limes over the fish. Place a pat of butter on the fish and bake at 375 degrees for about 13 minutes or until the fish is flakey. This works best if you use a cast iron skillet.

So easy and so good. We usually have this about once a week.

This was the first meal I ever made for my hubby. I've got a friend that calls it "happiness on a plate". It seriously rocks!

Yucatan Chicken
2 cubed chicken breasts,
2 Tbsp lemon juice
16 oz Stewed Tomatoes
2 Tbsp sugar
1 Tbsp taco seasoning
1 ½ tsp cornstarch
1/4 tsp garlic powder
tortilla chips
cheese, tomtatoes, lettuce, olives, or whatever else you like on a taco salad.

Arrange chicken in a large microwave safe dish. Sprinkle with lime/lemon juice and taco seasoning. Cover with vented plastic wrap or lid. Microwave on high 8-10 minutes, or until chicken is cooked. Stir once or twice during cooking.
Combine tomatoes, peppers, sugar, corn starch and garlic in a blender. Blend until well mixed. Pour over chicken. Microwave on high uncovered 4-5 minutes, or until hot. put it together on your plate like you would a taco salad. Serves 4

I love sunkissed too! A funny/cute story to share, my 11 year old son and my DH were recently talking about the diet I'm on. DS asked, "Daddy, why is Mommy on a diet?". DH gave him a short explanation - healthier, loose a few pounds, etc. DS says, "But why Daddy? Mommy looks beautiful the way she is!" i'm not a good cook, so i won't leave you a recipe! and i'd tell you how i met my ex, but it's not really a family-blog-appropriate story! (dark bar, a few too many cocktails, you get the picture!)

however, i've always thought that my parent's story was great, so i'll tell you theirs! my parents met at a party when my mom was 16. she was supposed to get a ride to the party with her older brothers, but at the last minute they decided to kayak across the river to the party - so she arrived via kayak! i always thought that was pretty random and unusual. also, on their first date, she wore a shirt she had made herself. it was the mid 70s, and the shirt was made out of 4 polyester kerchiefs. she remembers clearly that she was wearing it, because it was summer and she had such a bad sunburn that it was all she could bear to have on her shoulders! she still has the shirt, and i used to wear it all the time.

One of my favorite things I have made lately was kebobs: you wrap chicken with a piece of bacon (add bbq sauce if you like) and alternate that with slices of fresh peaches or nectarines and grill them on the bbq, serve with a salad and it is a great warm weather meal.

CHEESY TATER TOT CASSEROLE

2 lb Hamburger
2 cans Cream of Potato Soup
1 can Cheddar Cheese Soup
1 bag Tator Tots
1 package Onion Soup Mix

Mix raw beef, 1 can potato soup and dry soup, and pat mixture into the bottom of a 9x13-inch pan. Spread the second can of potato soup on top. Spread cheese soup on top of potato soup. Layer tater tots across to completely cover top.

Bake at 350°F for 1 hour to 90 minutes, or until meat is cooked and tater tots are beginning to crisp.

My sewing funny comes from our family friends son who called Joanne's chain store Jonannes when he was little.(Usually with a little whine, "Not Jonannes.") We pretty much call it Jonannes still. :)

Recipe: Pour 1/4 cup of apple juice into a crock pot, then add boneless pork ribs or pork loin roast. Drizzle honey on the pork, then sprinkle black pepper, garlic, and chili powder on top of the meat. Cook on low for 6-8 hours. If desired, add red potatoes cut in half and fresh carrots cut it thirds when the meat has about 2 hours left.
Delicious as is or with BBQ sauce as pork sandwiches

My fave summertime recipe is to take left-over chicken, and make chicken salad, then "sort of" scoop out some avocado halves, to add to the mixture. Throw that back into the semi-hollowed out avocado half. Sit. Spoon. Enjoy.

3 lb beef roast
1 can jellied cranberry sauce (16 oz, not the little one)
1 packet onion soup mix
Combine all in slow cooker and let cook on low while you're at work. Delish!!

Chicken Coconut Rice
* 1 cup Basmati Rice
* 1 cup Water
* 1 cup Coconut Milk
* 1 teaspoon Sugar
* ½ teaspoons Salt
* ¼ cups Frozen Peas
* ½ cups Cooked Chicken
* ¼ cups Roasted Peanuts, For Topping
* ¼ cups Chopped Cilantro, For Topping

Preparation Instructions

1. Wash rice and put in the rice cooker. Add water, coconut milk, sugar, salt and peas.

2. Chop or shred leftover cooked chicken and put in the rice cooker with the rest of the ingredients.

3. Close the lid and turn on the rice cooker.

4. When the rice is done, stir it all up and top with the roasted peanuts and cilantro. Enjoy!

As a high school senior, I went to "Connect with Tech" at Georgia Tech to check out the school and see what all was offered for freshmen, it wasn't orientation but sort of because I was already accepted. On the last day, we were in the ballroom and each major had t's own table with current students that you could ask questions to etc - my major was architecture and there was a super cute guy as the student rep sitting there and I kept catching him looking at me - at the end of the session he came over and introduced himself and handed me a piece of paper w/ a # on it and told me to look him up in the fall...about 2 wks later we had our first date and in April we celebrated 11 yrs together and 2 kids. I absolutely "connected" :)

We jabbered for a few years back and forth online - all our mutuals swear they saw it coming - we went to see "Dawn of the Dead" 7 years ago for our first date and that was that!

Last night I put her in her crib, expecting some tears since she was hurting, but she picked up a book and her blanket, curled up, and said "bye-bye. bye-bye mama." Not sure how I am so blessed as to have such a darling little girl...I sure wasn't!

What a great story on your blog name! I love Sunkissed!!! Would love to win some...Easy recipe. Roast chicken (4lbs). A few Tbls butter, mixed with seasonings of your choice. Rub butter all over chicken and put some UNDER the breast and thigh skin.Sprinkle soy sauce all over. Place breast side down, roast for 45 min.covered. Turn over,uncover, continue cooking till done. I like to add cut up potatoes, carrots, whole garlic cloves and onion to the pan also. Add a bit of water so the potatoes don't stick.

What a lovely giveaway! I'm really bad with jokes! Here's something I've made for dinner...takes less than 1 hour to prepare.

Beef (steak or something cut into thin strips) - add a little meat tenderizer.
Sautee in Olive oil with minced garlic and onions over med/low heat.
Drain excess liquid and add 1-2 cans of diced tomatoes (leave in juice or most of juice)
add canned mushrooms and sliced black olives.
Salt/pepper to taste...and about 1-2 tsps. Italian seasoning.
Cover and simmer on low.
Make brown rice or noodles - whatever you like...and serve.
Top with some fresh grated Parm Cheese. =) Enjoy.

Cheeseburger Pie

1lb Ground beef Browned
Add to the beef: 1/3cup Ketchup, 3Tbs mustard and onion/salt/pepper to taste.

Place the above in a 9" pie dish, top with 2cups of shredded cheddar cheese.

Mix together: 2eggs, 1cup milk & 1/2cup bisquick mix... Pour this mixture ontop of the meat/cheese mixture.

Bake for 25min @ 375* Serve with your fav picnic sides :) Enjoy!

He was born when I was studying abroad in New Zealand, and his family lives out in Alabama while I live on a tiny post-college budget in Philadelphia. Oh my gosh, how funny. I was in a due date group with some ladies on a PCOS forum and we are all still friends. I have a couple I am really close with but the group as a whole has mostly stayed together and we are all friends on facebook and twitter and we do birthday gift and Christmas exchanges from our kid to another in the group every year now. I finally got to meet one on her way to Disney from Canada!! It was so cool. One day I will meet the others. Our kids were born in Aug 07 :)

Baked Chicken Breasts

3-4 whole chicken breasts, boned, split and skinned
1 cup sour cream
1 can cream of mushroom soup
6 to 8 slices bacon

Wrap each chicken breast in bacon and cook uncovered in 350 oven for 20 minutes. Mix sour cream and undiluted soup. Pour over chicken and continue baking for 40 minutes.

Hi! I would love to win the Sunkissed charm pack. :) I thought you might like my homemade taco seasoning mix recipe.

1/4 cup dry onion flakes
1 1/2 Tbsp. cornstarch
1/4 cup chili powder
1 Tbsp. cumin
1 1/2 tsp. oregano
1 Tbsp. garlic powder
1 Tbsp. crushed red pepper flakes
1 Tbsp. beef bouillon powder

Combine. Store in a cool dry place.

2 Tablespoons of mix are equal to 1 package of taco seasoning,and is enough for 1 pound of ground beef.

To use: Brown hamburger, then add 3/4 cup water and the 2 Tbsp. of seasoning mix. Simmer 10 minutes.

Recipe: Super easy tasty rice

1 c rice
2 c just boiled chicken broth (I mix "Better than Bouillion" stuff with boiling water)
handful green onion pieces

Put it all in a casserole dish, covered, in the oven at 350F, for 35 min. My hubby said "tastes like riceroni, but healthy" then a pause, then "that's a good thing."

For the green onion, I buy bunches and cut them up all at once, then put them in a ziploc and freeze them. After they are frozen, just beat them on the counter the first time you take 'em out to break them apart. That way, you don't have to cut them every time, have green onion slime dripping out of the month old bag in the fridge, and get your hands smelling strange all the time.

PEANUT SOUP
•2 cups uncooked boneless, skinless chicken breast (about 2 breasts)
•Dash peanut oil (or vegetable oil)
•3-5 cloves garlic, pressed or minced
•½ a medium minced onion
•Whole ginger, minced, to taste (about 1” of root)
•2 stalks celery, diced
•1 – 2 carrots, diced
•1 little fresh tomato, diced
•1 cup creamy natural peanut butter
•6 oz. unsalted tomato paste
•1 tsp. cayenne
•1 carton (about 32 ounces) chicken stock


1. Dice approx. 2 frozen chicken breasts into bite-sized pieces.

2. Add dash of peanut oil to pan, and sauté garlic and onion. Then add the diced chicken, and sauté until chicken is cooked.

3. Add diced ginger, celery, and carrots, and sauté for about 5 minutes, stirring occasionally. While this is cooking, mix the peanut butter and tomato paste together with some of the chicken stock (to make a smooth liquid, rather than having big clumps of peanut butter and paste).

4. Add the two mixtures to the rest of the chicken stock, and add the diced tomato and cayenne to taste. If necessary, thin to desired consistency with a bit of water.

NOTE: Can be eaten like a plain soup, but makes an entire meal served warm over a scoop of rice.

After mixed well, place on top of french bread and top with cheddar cheese. bake in the oven until heated through and the cheese is melted. slice into individual servings. serve with your favorite chips. Yummy! A good way to have something more than an ordinary sandwich. :)

One of my favorite things to make is pork chops with apples. If you want the pork chops to taste really good peel and slice apples that you would normally use for pie filling add cinnamon, sugar and butter with the apples. I use thin pork chops and place them in a baking pan and put the apple mix on top. Cover it with foil. The pork chops absorb the apple cinnamon flavor.

Me: Where?

Her: Pee is from water and poop is from food.

Me: Where did you hear that?

Her: I told you I just figured it out (with eyes rolling).
